Club Sandwich
Ingredients
- 1/2 Hass avocado
- 2 tbsp white vinegar
- 1 tbsp chopped fresh oregano
- 1 tbsp plain Greek yogurt
- 2 large cloves garlic, minced
- 12 slices whole wheat bread
- ½ cup sliced red onion
- ⅓ cup sun-dried tomatoes
- ⅓ cup thinly sliced pepperoncini
- 1 freshly roasted orange
- ⅓ cup red pepper
Preparation
1.Squeeze the avocado into a small bowl. Mash and stir it in the vinegar, oregano, yogurt and garlic to make a smooth paste. Put the avocado paste on each slice.
2. Top the slices of bread with the arugula, tofu, onions and sun-dried tomatoes and place one more bread slice on it.
3. Now put the cucumbers, pepperoncini, and roasted peppers on these bread slices. Finally, place the remaining bread slices on top, avocado-side down.
4. Insert the bamboo picks into each sandwich, cut the sandwich into the half on the diagonal with a bread knife. Your yummy Club Sandwich is ready to serve.
Classic Beef and Broccoli
Ingredients
- 180 ml soy sauce
- 1 tbsp lime juice
- 3 tbsp brown sugar
- 2 tbsp cornflour
- Salt as per requirement
- Grinded black pepper
- 450 g sirloin steak
- 2 tbsp vegetable oil
- 2 tbsp crushed garlic
- 80 ml beef (or chicken) stock
- Florets of broccoli
- Sesame seeds
- Sliced spring onions
Preparation
1.In a bowl add soy sauce, lime juice, brown sugar, and corn flour and mix well.
2. Add steak and season it with salt & pepper. Now coat the steaks and marinate for 20 minutes.
3. Heat vegetable oil in a pan and add the broccoli. Cook the broccoli for 2 minutes and remove it aside.
4. Heat the vegetable oil on the same pan. Add the marinated beef and stir fry for 3 minutes.
5. Add the remaining marinade mixture & cook while stirring constantly until the liquid evaporates. 6. Add the broccoli into the cooked beef and cook for a few minutes.
7. Your Classic Beef and Broccoli is ready. Serve with steamed rice.
Vegetable Noodles
Ingredients
- 2 tbsp vegetable oil
- 5 cloves garlic, minced
- 4 sliced spring onions
- 1 cup capsicum
- Other vegetables
- 2 carrots, cut into matchsticks
- 1 cup snap pea
- 2 tbsp brown sugar
- 3 tbsp soy sauce
- 9 oz dried rice noodles, cooked
Preparation
1.Heat the oil in a skillet. Add the garlic and 3 spring onions and cook it for 2-3 minutes.
2. Add the carrots and peas, and other vegetables and cook it again for a few minutes.
3. Now add the brown sugar and soy sauce into these cooked vegetables.
4. Add the noodles and mix well. Cook it for a couple of minutes.
5. Season the cooked noodles with salt, pepper, and sliced spring onion.
6. Serve the yummiest vegetables noodles.
Chicken Fried Rice
Ingredients
- 2 tbsp olive oil
- 3 chicken breasts
- Kosher salt
- Grinded black pepper
- 2 tbsp sesame oil
- 1 chopped onion,
- 2 peeled & diced carrots
- 3 cloves garlic, minced
- 1 tbsp freshly minced ginger
- 4 cup boiled white rice
- ¾ cup frozen peas
- 3 beaten eggs
- 3 tbsp low-sodium soy sauce
- 2 sliced green onions
Preparation
1.In a skillet, add olive oil and heat it at medium flame. Season the chicken with salt & pepper.
2. Add chicken pieces in the skillet and fry it until golden brown. Remove the fried chicken from the pan and cut into bite sized pieces.
3. In that skillet, heat the olive oil again & add onion and carrots and cook until softened.
4. Add garlic and ginger and cook until fragrant.
5. Add the boiled rice and peas and cook until the rice is warmed through.
6. Add the sesame oil and egg into the cooked rice and mix well.
7. Finally add chicken back to the skillet with soy sauce and green onions and mix well.
